Yum — a classic vegetable soup! 🥕🍅🌽
It’s one of the easiest and healthiest comfort foods you can make — packed with flavor, nutrients, and whatever veggies you’ve got on hand.

Here’s a simple, hearty recipe:


🥣 Homemade Vegetable Soup

Ingredients

  • 2 tbsp olive oil or butter

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 1 potato, diced

  • 1 zucchini, chopped (optional)

  • 1 cup green beans or peas

  • 1 can (14 oz / 400 g) diced tomatoes

  • 4 cups (1 L) vegetable broth (or chicken broth)

  • 1 tsp dried thyme or Italian seasoning

  • Salt and pepper, to taste

  • A handful of spinach or kale (optional, added at the end)


Instructions

  1. Sauté aromatics:
    Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery. Cook 5–7 minutes until softened.

  2. Add garlic and seasoning:
    Stir in garlic, thyme (or Italian seasoning), salt, and pepper. Cook another 30 seconds until fragrant.

  3. Add remaining veggies and broth:
    Toss in potatoes, tomatoes, green beans, and broth. Bring to a boil, then reduce heat and simmer about 20–25 minutes, or until vegetables are tender.

  4. Finish it up:
    Stir in spinach or kale (if using) and cook another 2–3 minutes until wilted.

  5. Taste and adjust:
    Add more salt, pepper, or herbs if needed. You can also add a splash of lemon juice or hot sauce for brightness.


🍞 Serving Ideas

  • Serve with crusty bread or garlic toast.

  • Top with a sprinkle of Parmesan cheese or fresh herbs (like parsley or basil).

  • Add cooked beans, lentils, or pasta to make it heartier.
