Slow-Cooked Pot Roast with Gravy Over Creamy Mashed Potatoes

Here’s a classic Slow-Cooked Pot Roast with Gravy over Creamy Mashed Potatoes — comfort food at its finest 🥩🥔


Ingredients

For the Pot Roast

  • 3–4 lb beef chuck roast
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, quartered
  • 3 carrots, cut into chunks
  • 3 celery stalks, cut into chunks
  • 4 cloves garlic, smashed
  • 2 cups beef broth
  • 1 cup red wine (optional, or extra broth)
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 2–3 sprigs fresh thyme (or 1 tsp dried)
  • 2–3 sprigs fresh rosemary (or 1 tsp dried)
  • 2 bay leaves

For the Mashed Potatoes

  • 2 lb potatoes, peeled and cut into chunks
  • ¼ cup butter
  • ½ cup milk (adjust for creaminess)
  • Salt and pepper, to taste

Instructions

Pot Roast

  1. Season roast generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear roast 2–3 minutes per side until browned.
  3. Place roast in a slow cooker. Add onion, carrots, celery, garlic, thyme, rosemary, and bay leaves.
  4. Whisk together beef broth, wine, tomato paste, and Worcestershire sauce. Pour over the roast.
  5. Cook on low 8–9 hours or high 4–5 hours, until meat is tender and falls apart easily.

Mashed Potatoes

  1. Boil potatoes in salted water until fork-tender, 15–20 minutes. Drain.
  2. Mash with butter, then add milk gradually until creamy. Season with salt and pepper.

Gravy

  1. Remove roast and vegetables from slow cooker.
  2. Pour juices into a saucepan. Bring to a simmer. Whisk in 1–2 tablespoons cornstarch mixed with cold water to thicken (optional). Adjust seasoning.

Serve

  1. Slice or shred roast. Serve over mashed potatoes, spooning gravy and vegetables on top.

Tips & Variations

  • Extra flavor: Brown vegetables lightly before adding to the slow cooker.
  • Herb swap: Oregano or sage works well if you don’t have rosemary.
  • Make-ahead: Pot roast tastes even better the next day; reheat gently in the gravy.
