Here’s a classic Savory Meatloaf with Caramelized Onion Gravy — tender, flavorful, and topped with a rich, sweet-savory onion gravy that makes it a true comfort-food centerpiece.


🍽️ Savory Meatloaf with Caramelized Onion Gravy

Ingredients (serves 6–8)

For the Meatloaf

  • 2 lbs ground beef (80/20 for juiciness)

  • 1 onion, finely diced

  • 3 cloves garlic, minced

  • 2 eggs

  • ¾ cup breadcrumbs

  • ½ cup milk

  • ¼ cup ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tbsp Dijon mustard

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp smoked paprika

  • 1 tsp dried thyme

  • Optional: ½ cup grated Parmesan

For the Caramelized Onion Gravy

  • 2 large yellow onions, thinly sliced

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1½ tbsp flour

  • 3 cups beef broth

  • ½ tsp Worcestershire sauce

  • ½ tsp thyme

  • Salt & pepper to taste

  • Optional: splash of cream or extra butter for richness


Instructions

1. Prepare the meatloaf

  1. In a large bowl, combine beef, onion, garlic, eggs, breadcrumbs, milk, ketchup, Worcestershire sauce, mustard, and seasonings.

  2. Mix gently to avoid compacting the meat.

  3. Shape into a loaf on a parchment-lined baking sheet or in a loaf pan.

2. Bake

  • Preheat oven to 350°F (175°C).

  • Bake for 55–70 minutes or until internal temperature reaches 160°F.

  • Let rest 10 minutes before slicing.

3. Make the caramelized onion gravy

  1. Heat butter + olive oil in a skillet over medium heat.

  2. Add onions and cook 20–30 minutes, stirring occasionally, until deep golden and sweet.

  3. Sprinkle flour over onions and cook 1–2 minutes.

  4. Gradually whisk in beef broth, Worcestershire sauce, thyme, salt, and pepper.

  5. Simmer 8–10 minutes until thickened. Stir in cream or extra butter if desired.

4. Serve

  • Slice the meatloaf and pour the warm onion gravy over the top.

  • Pair with mashed potatoes, roasted vegetables, or green beans.


💡 Tips & Variations

  • Extra moist: Add ½ cup grated zucchini or sautéed mushrooms.

  • Classic diner-style glaze: Mix ketchup + brown sugar + vinegar and brush on top during the last 15 minutes of baking.

  • Herb-forward: Add fresh parsley, rosemary, or sage.

  • Make ahead: Both meatloaf and gravy reheat beautifully.
