Salt & pepper to taste

Instructions
1. Prepare the meatloaf

In a large bowl, combine beef, onion, garlic, eggs, breadcrumbs, milk, ketchup, Worcestershire sauce, mustard, and seasonings.

Mix gently to avoid compacting the meat.

Shape into a loaf on a parchment-lined baking sheet or in a loaf pan.
2. Bake

Preheat oven to 350°F (175°C).

Bake for 55–70 minutes or until internal temperature reaches 160°F.

Let rest 10 minutes before slicing.
3. Make the caramelized onion gravy

Heat butter + olive oil in a skillet over medium heat.

Add onions and cook 20–30 minutes, stirring occasionally, until deep golden and sweet.

Sprinkle flour over onions and cook 1–2 minutes.

Gradually whisk in beef broth, Worcestershire sauce, thyme, salt, and pepper.

Simmer 8–10 minutes until thickened. Stir in cream or extra butter if desired.
4. Serve

Slice the meatloaf and pour the warm onion gravy over the top.

Pair with mashed potatoes, roasted vegetables, or green beans.
