π₯π₯ Sausage and Potato Skillet
Ingredients

1 lb smoked sausage (kielbasa or andouille), sliced

4β5 medium potatoes, diced (Yukon gold or red potatoes work best)

1 medium onion, diced
-
1 bell pepper, diced (optional)
-
2β3 cloves garlic, minced
-
2β3 tbsp olive oil or butter
-
1 tsp paprika
-
Β½ tsp garlic powder
-
Salt & pepper, to taste
-
Optional: Β½ tsp Italian seasoning, red pepper flakes
-
Fresh parsley or green onions (for garnish)
π³ Instructions
1. Cook the potatoes

Heat 1β2 tbsp oil in a large skillet over medium heat.

Add diced potatoes and cook 10β12 minutes, stirring occasionally.

Season with salt, pepper, paprika, and garlic powder.

Cook until potatoes are browned and almost tender.
2. Add sausage & vegetables

Push potatoes to the side; add a bit more oil if needed.

Add sliced sausage and cook until browned (about 5 minutes).

Add onions and bell peppers, cooking until softened.

Stir in garlic and cook 30 seconds.
3. Combine & finish
Stir everything together and cook another 3β5 minutes until potatoes are fully tender and flavors combine.
Taste and adjust seasoning.
