Here are classic-style pig feet (pigs’ feet / pig’s trotters) prepared the old-fashioned way β€” tender, rich, and full of deep flavor. This is a Southern–soul food style braised recipe, but I can also give you pickled, Filipino adobo, Jamaican stew, or pressure cooker versions if you want.


πŸ– Southern Braised Pig Feet (Tender & Flavorful)

⭐ Ingredients (serves 4–6)

  • 3–4 lbs pig feet, split and cleaned

  • 1 onion, chopped

  • 4 cloves garlic, smashed

  • 2–3 celery stalks, chopped

  • 1–2 carrots, chopped (optional)

  • 2 bay leaves

  • 1 tbsp salt (adjust later)

  • 1–2 tsp black pepper

  • 1 tbsp apple cider vinegar (helps tenderize)

  • 1 tbsp Worcestershire sauce (optional)

  • 1–2 tsp paprika

  • ½–1 tsp crushed red pepper flakes (optional)

  • 5–6 cups water or broth

  • Optional for more depth: a little smoked turkey wing or a small ham hock

1. Rinse and blanch (important!)

Boil pig feet in a pot of water for 5 minutes.
Drain and rinse.
(This removes impurities and gives a cleaner broth.)

2. Build the braise

In a large pot or Dutch oven, add:
pig feet β†’ onion β†’ garlic β†’ celery β†’ carrots β†’ bay leaves β†’ spices β†’ vinegar β†’ Worcestershire β†’ broth/water.

3. Simmer low & slow

Bring to a boil, then reduce to low and simmer 2.5–3.5 hours, covered.
Stir occasionally and skim fat from the top.

They’re done when the meat is fall-off-the-bone tender and gelatin-rich.

4. Reduce the broth (optional)

Let the liquid simmer uncovered for 10–15 minutes to thicken into a rich sauce.

5. Taste & season

Add more salt, pepper, or vinegar at the end to brighten flavor.

Cook on High Pressure for 45–50 minutes, natural release 10 minutes.

Add:

  • 2 tbsp brown sugar

  • 1–2 tbsp hot sauce

βœ”οΈ Pickled Pig Feet (old-school)

Simmer until tender, then soak in a brine of vinegar, water, salt, peppercorns, and bay leaves for a few days.

βœ”οΈ Asian-Style Soy-Braised Pig Feet

Add soy sauce, ginger, star anise, garlic, and a little sugar; cook until glossy and sticky.
