Here’s an easy, flavorful Oven-Baked Sausage and Bell Pepper Tray — one pan, big comfort flavor 🌶️

Oven-Baked Sausage & Bell Peppers

Ingredients

  • 1½–2 lb Italian sausage (sweet or hot)
  • 3 bell peppers (mixed colors), sliced
  • 1 large onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder (or 3 cloves fresh garlic, minced)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Optional: red pepper flakes, fresh basil, or Parmesan

Instructions

  1. Preheat oven to 400°F (205°C).
  2. Line a large sheet pan with foil or parchment.
  3. Spread peppers and onion on the pan.
  4. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss to coat.
  5. Arrange sausages on top of the vegetables.
  6. Bake for 35–40 minutes, turning sausages halfway through.
  7. For extra browning, broil 2–3 minutes at the end (optional).

Serving Ideas

  • On hoagie rolls for sausage & pepper sandwiches
  • Over rice or pasta
  • With crusty bread and mustard
  • Low-carb as-is

Tips

  • Prick sausages lightly to release excess fat if very fatty
  • Add sliced mushrooms or potatoes for a full meal
  • Use pre-cooked sausage to cut bake time to 25 minutes
