🍳 Baked Cottage Cheese Eggs

Ingredients

  • 4 large eggs

  • ½ cup cottage cheese

  • ¼ cup shredded cheese (cheddar, mozzarella, or Swiss — optional)

  • 1 tbsp milk or cream (optional for extra fluffiness)

  • Salt and pepper, to taste

  • Optional mix-ins:

    • Diced bell peppers, spinach, mushrooms, or tomatoes

    • Cooked bacon, ham, or sausage

    • Fresh herbs like chives, parsley, or basil


Instructions

  1. Preheat oven:
    375°F (190°C). Lightly grease or spray 4 small ramekins (or a baking dish).

  2. Mix the eggs:
    In a bowl, whisk together eggs, cottage cheese, milk (if using), salt, and pepper. Stir in any mix-ins or shredded cheese.

  3. Bake:
    Pour the mixture into the ramekins (or dish). Bake for 20–25 minutes, until eggs are set and slightly golden on top.

  4. Serve:
    Let cool slightly, then top with herbs or a sprinkle of extra cheese if desired. Serve warm with toast, avocado, or fresh fruit.
