🍫 Chocolate Peanut Caramel Bars

Ingredients

For the crust:

  • 1 cup all-purpose flour

  • ¼ cup brown sugar

  • ½ cup (1 stick) unsalted butter, melted

  • Pinch of salt

For the caramel layer:

  • 1 cup soft caramels (about 30 unwrapped pieces)

  • 3 tbsp heavy cream

  • 1 cup salted peanuts, roughly chopped

For the chocolate topping:

  • 1½ cups semi-sweet chocolate chips (or milk chocolate, if preferred)

  • 2 tbsp peanut butter (optional for smoothness & flavor)


Instructions

  1. Preheat oven:
    350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  2. Make the crust:
    Mix flour, brown sugar, melted butter, and salt. Press into the bottom of the pan.
    Bake 15–18 minutes, or until golden. Let it cool slightly.

  3. Make the caramel layer:
    In a microwave-safe bowl, melt caramels and heavy cream in 30-second bursts, stirring until smooth.
    Stir in chopped peanuts, then pour evenly over the crust.
    Chill 10–15 minutes to set slightly.

  4. Make the chocolate layer:
    Melt chocolate chips and peanut butter together (microwave 30 seconds at a time, stirring until smooth).
    Pour over the caramel-peanut layer and spread evenly.

  5. Set & cut:
    Refrigerate for about 1–2 hours until firm. Lift from pan using parchment and cut into bars.


💡 Tips

  • For a softer caramel layer, add a splash more cream.

  • Sprinkle a little sea salt on top before the chocolate sets for a gourmet touch.

  • Store in an airtight container in the fridge for up to a week (they also freeze beautifully).
