π² Slow Cooker Beer Bratwurst with Onions & Peppers
Ingredients
-
6β8 bratwurst sausages
-
2 bell peppers (any color), sliced
-
1 large onion, sliced
-
3 cloves garlic, minced (optional)
-
12 oz (350 ml) beer (lager or ale works best)
-
2 tbsp olive oil
-
1 tsp smoked paprika (optional)
-
Salt and pepper, to taste
-
4β6 hoagie rolls or buns (for serving)
Instructions
-
Prep veggies:
Slice bell peppers and onions. Mince garlic if using. -
Sear the brats (optional, but adds flavor):
Heat olive oil in a skillet over medium heat. Brown brats 2β3 minutes per side until lightly golden. (You can skip this step and put them straight into the slow cooker.) -
Assemble in slow cooker:
Place sliced onions, peppers, and garlic in the bottom of the slow cooker. Lay brats on top. Pour beer over everything. Sprinkle with paprika, salt, and pepper. -
Cook:
Cover and cook on low for 4β6 hours or high for 2β3 hours. Brats should be cooked through, and veggies tender. -
Serve:
Serve brats with onions and peppers on their own or in buns. Optional: top with mustard or sauerkraut.
π‘ Tips
-
Beer choice matters: A mild lager or amber ale works best for a balanced flavor.
-
For extra caramelization, broil the cooked brats and veggies 3β5 minutes before serving.
-
Leftovers taste great chopped into breakfast hash or scrambled eggs the next day.
If you want, I can also give a one-step version where you throw everything into the slow cooker without searing β minimal cleanup, still super flavorful.
Do you want me to do that?
